Mushroom and Sausage Breakfast Patty Shells
Ingredients:
1 pkg Tenderflake Patty Shells
4 Maple Leaf Fully-Cooked Sausages, cut into ¼” (½ cm) pieces
1 tsp (5ml) olive oil
1 cup (250ml) mushrooms, sliced
2 green onions, sliced
½ cup (125ml) Cheddar cheese, grated
2 cups (500ml) scrambled eggs
Method:
Prepare patty shells as per package directions. Heat oil in a large flat-bottomed fry pan, add Maple Leaf Fully-Cooked Sausages (cut into pieces) and mushrooms. Cook over medium heat for 2 – 4 minutes. Add green onions, and cook for 2 – 4 minutes more until mushrooms are golden. Remove from heat and set aside to cool. Fill cooked patty shells with sausage and scrambled eggs. Top with mushroom and onion mixture. Sprinkle grated Cheddar cheese on top. Serves 4.
