Peach Cream Tart

Ingredients:

1 Tenderflake Pie Shell
6 - 10 peaches, sliced (peel if desired)
3 egg yolks, beaten
¾ cup (175ml) sour cream
¾ cup (175ml) sugar
¼ cup (50ml) flour
Whipped cream to serve

Method:

Prepare Tenderflake pie crust as per package directions. Using oven mitts, remove from oven, set aside to cool.
Preheat oven to 350˚F (180˚C).
Arrange the peach slices in overlapping circles in the cooked and cooled pie crust.
In a medium bowl, combine egg yolks, sour cream, sugar and flour, and beat until smooth. Pour mixture over the peaches.
Place on a baking sheet, and cook in a preheated oven for 45 – 50 minutes.
Using oven mitts, remove baking sheet from oven.
Serve with whipped cream and enjoy.
