Caramelized Onion Tarts
Ingredients:
1 pkg Tenderflake Tart Shells
2 tbsp (30ml) unsalted butter
1 tbsp (15ml) olive oil
2 Vidalia, or sweet onions, thinly sliced
Salt & pepper
1 cup (250ml) goat cheese, softened
2 tbsp (30ml) fresh chives, finely chopped
2 tbsp (30ml) fresh tarragon, finely chopped
Method:
Prepare Tenderflake Tart Shells as per package directions. Remove from oven, set aside and cool. In a large, flat-bottomed fry pan, melt unsalted butter and olive oil. Add onions to pan, and cook over low-medium heat until caramelized, soft and golden. Approx 20 minutes. Season with salt and pepper. Divide the softened goat cheese in the cooled tart shells. Top with the caramelized onion mixture, and sprinkle fresh herbs over the top.
