Pecan Pie
Ingredients:
1 Tenderflake pie crust
3 eggs, lightly beaten
2/3 cup sugar
1 tbsp all-purpose flour
Pinch salt
1 cup light corn syrup
4 tbsp unsalted butter, melted
2 tsp vanilla
1 cup chopped pecans
1 cup pecan halves
Method:
Prepare Tenderflake pie crust as per package directions. Set aside and cool. Preheat oven 375. In a large mixing bowl, combine eggs, sugar, flour, salt, corn syrup, butter and vanilla. Beat well until well mixed. Stir in chopped pecans, and pour into cooked pie crust. Arrange the pecan halves on top. Cover the rim of the pie shell with foil (to avoid over browning) Baked 50 minutes, until centre still moves slightly. The centre should be slightly gooey, but not syrupy. Cool at room temperature and serve.
